Crispy Red Bean Cake

To celebrate the Mid-Autumn Moon Festival, Miles and Myla’s mom, Jen, is sharing her recipe and teaching us how to make her super yummy Crispy Red Bean Rice Cake.

Ingredients

  • ¼ cup vegetable oil 
  • ¼ cup sugar 
  • 2 eggs 
  • 1 ¼ cup milk
  • ½ tbs baking powder 
  • 250g (half bag) Sun Right Glutinous Rice Powder 
  • 260g (half can) Morinago Sweetened Red Beans (Mashed)

Equipment

  • Mixing bowl
  • Measuring cups and spoons
  • Stand or electric hand mixer
  • Parchment paper 
  • 8″ x 8″ glass or metal baking pan 
  • Silicone spatula

Instructions

Preheat oven to 400 degrees F.

In a mixing bowl, add vegetable oil, sugar, eggs, and milk, and mix together with mixer until combined.

Add baking powder and glutinous rice powder to wet mix with mixer, again until combined. 

Add sweetened red beans (mashed) last and mix it gently with a silicone spatula. Pour mixture into 8″ x 8″ baking pan, lined with parchment paper. 

Bake 35-40 minutes @ 400 degrees F.
