Chocolate Chip Oreo Brownies

Here’s another sweet treat favorite from our home, Chocolate Chip Oreo Brownies (there’s another name out there for these, but not kid appropriate). If you’d like, you can just do the chocolate chip cookies or just the brownies and eat the Oreos with a glass of ice cold milk, but it’s pretty magical all together.

Ingredients

Chocolate Chip Cookie

  • 1 stick (1/2 cup) unsalted butter
  • ½ cup raw sugar (granulated sugar is ok too)
  • ¼ cup light brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 ½ cups all purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup chocolate chips (we like 60% cacao Ghirardelli chocolate chips)

Brownie Batter

  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 stick (1/2 cup) unsalted butter
  • ¾ cup unsweetened cocoa powder (we like Ghirardelli or Hershey)
  • 2/3 cup all purpose flour
  • ¼ tsp baking powder
  • ¼ tsp salt
  • Optional add ins: ½ cup chopped walnuts and/or 1 cup chocolate chips
  • 16-20 Oreo (any kind) cookies (small package)

Equipment

  • Mixing bowls
  • Measuring cups and spoons
  • Stand or electric hand mixer
  • Parchment paper or Pam baking spray (can use coconut or olive oil spray)
  • 8” x 8” x 2” glass or metal baking pan 
  • Silicone spatula and wooden spoon
  • Sifter

Instructions

Make the chocolate chip cookie dough

Melt butter in microwave for 40 seconds or just until in melts. Using a stand mixer or electric mixer, mix the melted butter with the raw/white and brown sugar until creamy. Add the vanilla and egg and beat on low speed until incorporated, about 15 seconds.

In a separate bowl, add flour, baking soda, and salt. Mix until combined. Add dry mixture to the wet mixture and mix until the dough comes together. Add the chocolate chips and mix until chocolate chips are incorporated.

Spray or line with parchment paper the 8” x 8” pan. Add cookie dough and press down with a spatula or clean hands to make a layer. Add a snug layer of Oreos, you may need to break some of them in half.

(If you decide to make some cookies, bake at 350 degrees F for 10 minutes.)

Preheat oven to 350 degrees F.

Make the brownie batter

Melt butter in microwave for 40 seconds or just until in melts. In a bowl, add sugar, eggs and vanilla. Mix with a wooden spoon or spatula until combined. Ad butter and continue to mix until combined.

In a separate bowl, sift cacao powder, flour, baking powder, and salt. Mix until combined. Add dry mixture to the wet mixture and mix until the batter comes together. Be sure to smoosh any powder clumps.

Pour brownie batter over Oreo layer and gently smooth to cover all the Oreos

Bake for 30-35 minutes until the top looks done and the center is not jiggly.

(If you decide to make only the brownies, bake at 350 degrees F for 20-30 minutes.)
