Apple Pie

Part II of Pies, Pies, Oh My! We have two options on how to make apple pie: dutch apple pie with a scrumptious streusel topping or the classic apple pie topped with lattice. Both are delicious and best when served warm with a scoop of vanilla ice cream!

Ingredients:

Crust and Apple Filling for both Dutch and Lattice Pies

  • 1 9-inch unbaked deep dish pie crust (we use Marie Callender’s frozen pie crusts)
  • 3lbs granny smith apples, peeled, cored and sliced 1/6 inch thick (about 6 medium or 4 large apples)
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar
  • ¼ cup flour
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ½ tsp salt
  • 1 tbsp lemon juice
  • 1 tbs cold butter, cut into small cubes (3 tbs if doing lattice pie)

Dutch Apple Streusel

  • ½ cup flour
  • ½ cup sugar
  • ½ cup brown sugar
  • ¾ tsp cinnamon
  • ¼ tsp nutmeg
  • 6 tbs cold butter, cut into small pieces

Lattice Pie Crust

  • 1 9-inch pie crust (we use Pillsbury found in a box in the refrigerated section)
  • 1 egg, beaten
  • 1 tbs water

Equipment:

  • Chef’s knife
  • Chopping board
  • Vegetable peeler
  • Measuring cups and spoons
  • Medium and large bowls

Additional Equipment for Dutch Apple Pie:

  • Pastry cutter or fork

Additional Equipment for Lattice Apple Pie:

  • Rolling pin
  • Pizza cutter / chef’s knife
  • Pastry brush
  • Fork

Instructions for Dutch Apple Pie:

Preheat oven to 425 degrees F.

Combine the sugars, cinnamon, nutmeg and salt in a medium bowl and set aside. In a large bowl, add the peeled, cored and sliced apples. Add lemon juice and mix gently, then add spice mixture and toss to coat. Add apple mixture to the pie crust and dot with butter. Bake for 20 minutes.

In the same medium bowl that you made the spice mixture in, add all the dry ingredients to make the streusel. Mix to combine. Add cold butter using a pastry cutter or fork until fully incorporated. Using your hands, squish the mixture until you have something that resembles wet sand.

Remove pie from oven and top with streusel mixture and reduce temperature to 375 degrees F. Continue baking for about 50 minutes. Allow to cool before serving. Serve with vanilla ice cream.

Instructions for Lattice Apple Pie:

Preheat oven to 375 degrees F.

Combine the sugars, cinnamon, nutmeg and salt in a medium bowl and set aside. In a large bowl, add the peeled, cored and sliced apples. Add lemon juice and mix gently, then add spice mixture and toss to coat. Add apple mixture to the pie crust and dot with butter.

In a small bowl, whisk egg and water for the egg wash and set aside. Unroll pie crust  and cut into ½ inch strips using a pizza cutter. Loosely lay out 6-7 strips of dough, parallel to each other with about ½ inch of space in between. These will be your East-West strips. Fold back every other East-West strip and place one long strip of dough down the middle, perpendicular to the other strips. This will be your North-South strip. Unfold your East-West strips over the North-South strip. Fold back your East-West strips that are under your North-South strip. Then lay down a new North-South strip. Unfold the East-West strips again.

Repeat until you have added 6-7 North-South strips and have made your lattice. Remember to keep the spacing about ½ inch. When finished with the lattice, press the strips into the bottom crust edge lightly to make a seal. Using a pastry brush, lightly brush the lattice with egg wash.

Bake for 55-60 minutes. Allow to cool before serving. Serve with vanilla ice cream.
