Holiday Butter Cookies

Soft and fluffy, but just as festive with frosting and sprinkles, and no rolling and cutting necessary.

Ingredients:

Cookie Dough:

  • 1 cup unsalted butter (2 sticks), softened
  • ½ cup sugar
  • 2 egg yolks
  • 1 tsp vanilla
  • 2 cups all purpose flour

Frosting:

  • 2 cups powdered sugar
  • 2 tbs unsalted butter, softened
  • 2-3 tbs milk

Plus lots of Sprinkles for decorating (we like to use use the nonpareils, the crunchy tiny balls)

Equipment:

  • Stand or electric hand mixer
  • Large mixing bowl
  • Medium bowl
  • Measuring cups and spoons
  • Drinking glass
  • Silicone mat/ parchment paper lined cookie sheets
  • Wire racks
  • Fork

Instructions:

Preheat oven to 325 degrees F.

In a large mixing bowl, cream butter. Gradually add sugar and mix. Add yolks with mixer running, and vanilla. Add flour and continue to mix until dough comes together. Using a small spoon, scoop out dough and roll into balls. Place on silicone lined cookie sheet. Press down each ball slightly with the bottom of a glass. Bake for 15-20 minutes until lightly golden. Cool completely on wire rack before decorating.

Frosting: In a medium bowl, mix powdered sugar and butter with a fork. Gradually add milk until you have a slightly thicker frosting. Using a knife, spread frosting on cookies and decorate with sprinkles.

Let the decorated cookies dry for a couple of hours. Store in an airtight container at room temperature, with wax paper in between layers of cookies.
