Mediterranean Chicken Burgers with Tzatziki and Hummus

A quick, yet delicious meal that’s another family favorite. This hummus recipe is the only one that Arya will eat.

Mediterranean Chicken Burgers

Ingredients:

  • 1 lb ground chicken
  • 1 tbs chopped fresh parsley
  • 2 large shallots, finely diced (can sub ½ red onion)
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 egg
  • 1 tsp salt
  • ¼ tsp black pepper

Equipment:

  • Large bowl
  • Chopping board
  • Knife
  • Measuring spoons
  • Frying pan

Instructions:

Combine all of the ingredients in a large bowl and mix with your hands until just combined. Set aside and make Tzatziki and Hummus.

Heat frying pan over medium high heat and add olive oil to lightly coat the pan.  Form 4-6 burgers.  Add burgers to pan and cook for 3-4 minutes per side until lightly browned. Burgers should be cooked completely.

Serve with pita/hamburger buns, lettuce, tomato, cucumber, onions, etc.

Tzatziki

Ingredients:

  • 1 cup plain yogurt
  • ½ cup diced cucumber (we usually use 1-2 Persian cucumbers)
  • 1 clove garlic, minced
  • 1 tbs fresh lemon juice (usually ½ medium lemon)
  • ½ tsp salt
  • Freshly ground pepper

Equipment:

  • Small bowl
  • Chopping board
  • Knife
  • Juicer/citrus reamer
  • Measuring spoons
  • Large spoon

Instructions:

Mix ingredients in a small bowl and stir until well combined.

Hummus

Ingredients:

  • 1 15 oz can garbanzo beans, reserve 2-4 tbs drained liquid
  • 3 tbs tahini
  • 2 ½ tbs fresh lemon juice (usually 1 large lemon)
  • 2 tbs extra virgin olive oil
  • 1 clove garlic
  • ¼ tsp ground cumin
  • ½ tsp salt

Equipment:

  • Food processor / blender
  • Measuring spoons
  • Juicer/citrus reamer
  • Spatula

Instructions:

In a food processor or blender, add all the ingredients then process for 5 minutes until smooth.  Adjust seasoning and texture by adding more reserved liquid, lemon juice and salt.
