Pancit Bihon and Filipino BBQ Pork Skewers

Childhood favorites and the Pancit Bihon recipe comes from Arya’s Nay-Na!

Pancit Bihon

Ingredients:

  • 1 tbs olive oil
  • 5 cloves of garlic, minced
  • 1 medium onion, thinly sliced
  • 2 medium/1 large carrots, peeled and cut into diagonal sticks
  • 2 stalks of celery, cut diagonally
  • 1/2 head of small cabbage, thinly sliced
  • 1 cup snow peas, cleaned and cut diagonally
  • 2.5 cups low sodium chicken or veggie stock
  • 3-4 tbs soy sauce
  • 1/8 tsp white pepper
  • freshly ground black pepper
  • 8 oz Excellent Rice Stick Bihon

Equipment:

  • Cutting board
  • Chef knife
  • Vegetable peeler
  • Measuring cups and spoons
  • Large wok or sauté pan
  • Large sauté spoon and spatula

Instructions:

In a large wok over medium high heat, add 1 tbs of olive oil and brown garlic. Add onions and cook until translucent; add carrot and cabbage and sauté for 2-3 minutes. Add chicken stock, soy sauce, white and black pepper and bring mixture to a boil. Remove half of the veggies without the stock and set aside. Rinse rice stick under cold water and then add to the wok. Cook noodles in the sauce for 8-10 minutes until softened, breaking it up using your spoon and stirring occasionally to prevent it from sticking. When it starts to stick to the pan and the stock has evaporated, it’s close to being done. Add the reserved cooked veggies and snow peas. Stir gently for 2-3 minutes until snow peas are cooked. Serve with calamansi or lemon wedges.

Filipino BBQ Pork Skewers

Ingredients:

  • 1 head of garlic, cloves smashed and peeled
  • 2 tsp salt
  • ½ tsp ground black pepper
  • ¼ cup granulated sugar
  • ¼ cup soy sauce
  • 1.5-2 lbs pork loin or pork butt, thinly sliced into small pieces*
  • ¾ cup ginger ale or 7Up soda

Equipment:

  • Cutting Board
  • Chef Knife
  • Measure spoons and cups
  • Metal or wooden skewers (soak wooden skewers for 30 minutes before using)
  • BBQ Grill (or can grill indoors on a grill pan) or Air Fryer

Instructions:

In a large container with a lid, add the garlic, salt, pepper, sugar and soy sauce and stir until sugar is dissolved. Add pork and mix gently to coat in marinade. Add the soda and stir gently. Cover tightly and place in the refrigerator overnight or at least 8 hours.

Preheat BBQ grill. Skewer meat and cook skewers over medium heat for 3-5 minutes per side, or until charred to your preference.

*Air fryer option – Instead of thinly slicing the meat, use thinly sliced pork loin or chops and air fry at 400 degrees F for 10-12 minutes, turning the pork over halfway.
