To celebrate the Lunar New Year, this simple but delicious dessert is a sweet treat to ring in the Year of the Tiger!
Ingredients
- ¼ cup vegetable oil
- ¼ cup sugar
- 2 eggs
- 1 ¼ cup milk
- ½ tbs baking powder
- 1 3/4 cups (250g) Sun Right Glutinous Rice Powder (half bag) / Mochiko Sweet Rice Flour (half box)
- 1 cup (260g) Morinago Sweetened Red Beans (Mashed) (half of 15.16 oz can) or Shirakiku Sweetened Red Bean (entire 7.4 oz can)

- 8″ x 8″ glass or metal baking pan
- Silicone spatula
Instructions
Preheat oven to 400 degrees F.
In a mixing bowl, add vegetable oil, sugar, eggs, and milk, and mix together with mixer until combined.
Add baking powder and glutinous rice powder to wet mix with mixer, again until combined.
Add sweetened red beans (mashed) last and mix it gently with a silicone spatula. Pour mixture into 8″ x 8″ baking pan, lined with parchment paper.
Bake 35-40 minutes @ 400 degrees F.
