Thomas Keller’s Roast Chicken

A simple and straightforward method to make perfect roast chicken every single time.

Ingredients:

  • 1 whole chicken, about 2-3 lbs
  • 2 tsp kosher salt
  • freshly ground black pepper
  • couple sprigs of fresh thyme

Equipment:

  • Paper towels
  • Roasting pan / shallow dutch oven

Instructions:

Preheat oven to 450 degrees F.

Rinse the chicken and dry it very well with paper towels, inside and out. Salt and pepper the cavity and add a few sprigs of fresh thyme.

Salt the chicken over the entire outside. Season to taste with pepper.  Place the chicken in the roasting pan / shallow dutch oven. Roast chicken for 50-60 minutes or until the juices roast clear.  Remove from oven it rest for 15 minutes before cutting it.
