Our Favorite Pancakes

This week we are going with Breakfast for Dinner by sharing our absolute favorite pancake recipe. I usually make a few plain ones, some with blueberries and then of course, Arya wants hers with chocolate chips and marshmallows (have you noticed a trend with Arya yet?). With the pancakes, we will also fry up some bacon, maybe some eggs too, and we’ve got breakfast for dinner!  This recipe makes about 12 medium sized pancakes, so feel free to double the recipe and you have breakfast covered for the following day. 

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 tbs + ½ tsp baking powder
  • ½ tsp salt
  • ¼ cup granulated sugar
  • 1 ¼ cups whole milk
  • 1 egg
  • 3 tbs unsalted butter, melted
  • 1 tsp vanilla extract
  • Butter or non-stick spray for the pan

Optional Add Ins – Blueberries, Chocolate Chips, Marshmallows, etc.

Toppings – Butter, Maple Syrup, Powdered Sugar, Cinnamon Sugar, Fruit, Whipped Cream, etc.

Equipment:

  • Microwaveable mug/bowl
  • Large bowl
  • 2-cup liquid measuring cup
  • Measuring cups and spoons
  • Whisk
  • Large non-stick skillet/pan
  • ¼ cup measuring cup / large spoon
  • Flexible spatula / pancake turner

Instructions:

In a microwaveable mug or bowl, melt the butter for 30 seconds and set aside.

In a large bowl, mix flour, baking powder, salt, and sugar.

In a 2-cup measuring cup, add the milk, egg and vanilla extract. Mix until blended.

Create a well in the center of the flour mixture and pour the milk mixture into the well. Use a wire whisk to stir until just combined. Add the melted butter and mix until butter is incorporated into the batter.  Allow batter to rest as you warm up the skillet. Note: the batter may puff up a little in the bowl.

Warm up a large non-stick skillet/pan on medium high heat. Add butter or spray to lightly grease the pan. Using a ¼ cup measuring cup, scoop batter directly on to the pan and cook on each side for 3-6 minutes, until lightly golden brown. The pancake is ready to turn when you see the batter start to puff and bubble. You may need to reduce your heat for the following batches. Serve with your favorite toppings and enjoy!

Add Ins – If you would like to add blueberries or chocolate chips, you can either add directly to the batter, or customize the pancakes by placing the add ins before flipping them over.
